Piaf is great. That's where I go.Here is where I go for sausage. Piaf. They have a massive meat counter that sells plain breakfast-style sausages (often called salchichas tipo Vienaor de copetín), and they also have a full pantry section loaded with nuts, including cashews "castañas de caju" and they also have almonds "almendras".

I like Magret. They have tasty stuff. I bought some in Jumbo the other day and it was good.Piaf has almonds and cashews. So does Cuatro Quesos that Wally and Content mentioned. I love pork sausage. Magret which is a good chorizo brand has tasty sausages.
They have a TON of sausages here. All kinds. I love chorizo.Love love love Piaf. Great staff and very friendly too. Stick to actual carnicerias.

This also excellent!Corte Carniceria is the best of the best. It's my butcher of choice in Belgrano. It's on Av. Olazábal 1391. If you like chorizo you're in for a treat! They have it with garlic, jalapeño, curry, criollo, and many different spices. They also deliver. Their beef is also the best.
